Who it suits: Cooks of all levels singles and couples especially welcome
Builds on: The popular Around the World Cooking on a Budget for One or Two format, with a festive twist
Lesson 1 A festive season without the financial hangover
Planning Christmas on a budget: pantry audit, shopping calendar, what to buy early and what to buy late. Setting each student's personal goal for the term.
Lesson 2 An Aussie summer Christmas
Seafood without the price shock, mango season magic, and a pavlova that works every time. Keeping Christmas food safe and appealing in the heat.
Lesson 3 British and Irish classics scaled right down
A mini roast dinner for two, Christmas pudding in a teacup, brandy butter and small-batch mince pies.
Lesson 4 Italy la vigilia
The Feast of the Seven Fishes on a pensioner's budget (two fishes will do nicely), simple pasta for the big day, and what to do with a supermarket panettone.
Lesson 5 Germany and Central Europe
Christmas market flavours at home: gingerbread, stollen made simple, red cabbage, and mulled drinks for warm and cool evenings alike.
Lesson 6 France rveillon elegance on a shoestring
How the French make simple food feel luxurious. A small bche de Nol, budget-friendly cheese course, and one impressive starter.
Lesson 7 Scandinavia the smorgasbord
Little dishes, big effect: quick pickles, cured salmon made easy, rye breads and glgg (with an alcohol-free version).
Lesson 8 Christmas in Asia and the Pacific
The Philippines' beloved noche buena, why Japan queues for fried chicken at Christmas, and festive flavours from our Pacific neighbours.
Lesson 9 Edible gifts from your kitchen
Rocky road, shortbread, spice mixes, jams and chutneys plus cheap and cheerful packaging that makes them look a million dollars.
Lesson 10 The grand finale
Each student designs their own Christmas menu for one or two, with a costed shopping list. We celebrate with a class festive tasting party offsite.
